Cinnamon Mini Pie Cookies

bake day has begun in the Holifield's household. This was Day 2: Cinnamon Mini Pie Cookies
They taste just like an elephant ear from the fair

roll our your dough, recipe can be found here--->butter pie crust

cut strips, you will need at least 24 per set *make sure you do this on parchment paper*

12 strips but remember you need 24

take 12 strips and line them up. Cross over only half way every other strip

take the other 12 strips you cut and place one down then bring the strips back over

now do every other strip that you just didn't do and add one of your 12 strips to it and so and so on until you've used all your 12 strips

if it doesn't look like this...go back you did something wrong and start over

 here is all 24 strips

now get out your circle cookie cutter and cut them out

coat each circle with melted butter and cinnamon sugar

now just take the parchment paper and put it on a cookie sheet...bake at 325 for 8-11 mins

then serve them with coffee or tea * if you cut them larger then what I did you could top your coffee mugs with them

Happy Baking
